My cuisine is based on intuition, on the sensitivity and ability to feel the raw product.  With the contribution of modern techniques I aim to express a flavour, never to conceive it.
Our kitchen places a high priority on ingredients produced on a small scale. My goal is to serve an innovative dish, but also to share with you the story of a proud producer.
